Brussels sprouts are one of those foods that I've grown to love as I've gotten older. As a child, I was a picky eater. I'm talking "pizza and chicken nuggets and ramen noodles ONLY" type of picky eater. While that was fun (while it lasted), in order to live longer than 35, I learned I would need to add more nutritious foods into my diet. Brussels sprouts are one of those foods. They're packed full of Vitamins K and C, and when cooked right, are absolutely delicious.  2 cups Raw brussels sprouts
  Onion, diced
 2 tbsp Rendered bacon fat (see video)
 1 tbsp Coconut oil
 Salt, pepper, onion powder, garlic powder, paprika
 2 Bacon slices, cooked

Preheat your oven to 375 and preheat a cast iron skillet to medium-high heat.

Cook your bacon strips in cast iron pan and remove strips from pan. Set strips aside on a cutting board to cool. Leave rendered bacon fat in the pan.

Cut the root off of each brussels sprout and then cut them in half from top-to-bottom. Cook for 3-5 minutes, stirring periodically with a wooden spoon.

Add in chopped onions and seasoning. Sautee for 3-5 more minutes and add coconut oil and mix well. Sprouts should be starting to brown on the cut sides at this point.

Add the bacon back in and transfer cast iron pan to oven and cook for 15 minutes. Stir sprouts and replace for an additional 15 minutes.

Brussels should end up browned but not burnt. Let cool for 5 minutes before serving. Enjoy!
