Christmas cocoa is a classic, and you shouldn't have to go without. Here's an EASY low carb/keto recipe to help you through it! You can find everything at Walmart (or your local grocery store).

 4 fl oz Brewed Coffee
 4 fl oz Unsweetened Almond Milk
 2 tbsp Heavy Whipping Cream
 1 tbsp Cocoa Powder
 ¼ tsp Peppermint Extract
 ¼ tsp Vanilla Extract
 4 drops Stevia (or other sweetener to taste)

1. To start your keto hot chocolate, you first need to brew your coffee. We have a keurig, so it was very easy to get the exact amount that we needed.

2. Add cocoa and unsweetened almond milk to the mug and stir. I use a coffee frother (mixing wand) on this part to make sure it gets mixed pretty good. Don't be sad if there are some clumps because the heat from the microwave will help.

3. Microwave for 30-60 seconds (until hot). This may take more or less time for you. Our microwave doesn't heat things up fast so it takes me 2 minutes.

4. Add remaining ingredients and mix well. You may want to use a coffee frother or a shaker bottle for this step to make it extra foamy. Just don't use a cocktail shaker since it's very hot! If you want to add in some tito's vodka at this point, do it!

5. Top your keto hot chocolate with fun stuff like whip cream, crushed SF peppermints, or gingerbread spice! You can omit the peppermint extract if you don't like that flavor and add other extracts at the same measurement. I'm especially fond of almond, rum, and butterscotch flavors.

If you want to make your keto hot chocolate even better, you can quadruple the recipe and put it all in a crockpot to simmer down.
