Evenly distribute your frozen berries between the popsicle mold. I prefer to use raspberries or blackberries since they're low carb and break up easily. Some other keto-friendly options are strawberries and blueberries. The nutrition facts here are provided with raspberries.
Boil your water, pour into a bowl, and sprinkle gelatin mix on top. Don't pour the whole packet in at once. We want to allow it to "bloom," so that it doesn't have any clumps. This will take 3-5 minutes.
Stir in gelatin until dissolved. Add the rest of your ingredients to the gelatin liquid and stir until completely mixed. I used watermelon flavored Ultima for these photos, but you can use any flavor you prefer.
Pour gelatin mixture into popsicle molds and place into freezer for 6-8 hours or until frozen.
