Keto Edge Brownie Waffles

Dry Ingredients
 3 tbsp Almond flour
 2 tbsp Swerve Classic
 1 tbsp Gelatin powder (1 packet)
 1 tbsp Cocoa powder
 ¼ tsp Espresso powder
 ¼ tsp Baking powder
  tsp Sea salt
 2 tbsp Lily's milk chocolate baking chips
 2 tbsp Lily's semi-sweet baking chips
Wet Ingredients
 1 Egg
 1 tbsp Heavy cream
 1 tbsp Unsalted butter, melted
 ½ tsp Vanilla extract
Optional
 Peanut butter
 Pat of butter
 Keto-friendly ice cream

Plug in a DASH Mini waffle maker and let it heat up while you make the ingredients.

Melt the butter in a cereal-sized bowl and add heavy cream and egg. Mix until thoroughly combined.

Mix all dry ingredients together in a separate bowl except for the chocolate chips.

Combine wet and dry ingredients and mix well. Add chocolate chips. Let stand for 3-5 mins so gelatin has time to absorb some liquid before cooking.

Batter will make 2 waffles, so pour half into your waffle maker at a time. Let it cook longer than the internal timer says to, for a total of about 5 minutes per waffle. Don't be shy about the time. You want to allow the edges to really crisp up. You'll know you've gone too far if you smell burnt chocolate.

After they've cooked, YOU MUST allow them to cool for at least 5 minutes. This is crucial to allow them to get that "edge brownie" texture. Some of the moisture evaporates during this time, which causes the edges to crisp up.

They're pretty much done at this stage, but they're even better with toppings! I add peanut butter or a pat of butter or a scoop of keto-friendly ice cream to the top of each and smear into the waffle notches. I hope you enjoy these as much as I did!
