Looking for a low carb version of this cajun favorite? Keto Dirty Rice is one of my favorite comfort foods. Here's how to make it keto-friendly.

Recipe Notes

There are a couple of things to consider in this recipe. You can use either fresh or frozen cauliflower, but I prefer the flavor that comes from the frozen variety. If you use fresh instead, I would cut it down to 3 1/2 cups of cauliflower, as the frozen bags are usually a little less dense due to ice.

The sausage I use in here is Conecuh hickory smoked sausage. If you're from the Southeastern United States, you've heard of it, and you probably love it. Conecuh can do no wrong. If you can't find this brand at your store, first off, I'm sorry. And second, I recommend that you use another smoked sausage, like Kelly's. If that fails, try using andouille sausage. I like it diced, because it gets more charred on a higher surface area, but you're welcome to use sliced sausage pieces, too.

The macros in this recipe use ground turkey. I always recommend calculating your own macros in an app like Carb Manager to help you figure out exact numbers. Ingredients and brands vary widely across regions, so while my numbers are accurate for what I cooked, yours might look a little different. 

Some people like to add additional meats to make a jambalaya. You can also put shrimp and chicken (and more) in this if you'd like. I just prefer the ground meat. Also, if you make this recipe with ground turkey, use chicken bone broth. If you make it with ground beef, use the beef bone broth. If you can't find bone broth, you can use regular broth, it just won't be as silky as the bone broth is.

 16 oz Ground turkey or ground beef
 6 oz Smoked sausage, diced
 4 cups Frozen Cauliflower Rice
 1 Large green bell pepper
 ¼ Large red onion, diced
 2 Green onions, finely sliced
 6 Cloves garlic, minced
 2 tbsp Pink salt, split
 2 tbsp Fresh cracked black pepper
 1 tbsp Garlic Powder, divided
 1 tsp Onion Powder
 1 tsp Crushed red pepper flakes
 ½ tsp Ground thyme
 ½ tsp Paprika
 ½ tsp Cumin
 ¼ cup Chicken or beef bone broth

Heat a large cast iron skillet on the stove at medium-high heat. If using ground turkey, add drizzle of olive oil to pan when it's hot. If using ground beef, omit oil.

Brown ground meat until 2/3 complete. Add half the amount of salt, pepper, and garlic powder in the recipe. Add diced sausage to pan and cook 5 mins while stirring. It's ok if some of the meat sticks to the bottom or gets brown at this point. This will help the color of the final product.

Add pepper and red onion to pan and cook until onion is transparent (about 5 mins). Add minced garlic and cook about 30 seconds or until fragrant. Watch this closely to ensure it doesn't burn.

Make sure the cauliflower isn't frozen into a block. If it is, hit the bag on the counter a few times and it should break apart. Dump the rice evenly into the pan but don't stir yet. Leave it for 90 seconds. This will allow some of the chill to come off of it before you stir, so that you don't cool down the pan too much.

After the 90 seconds has passed, mix well. Add all remaining dry seasonings and stir again until ingredients of entire pan are coated. Turn pan down to medium and let cook for 5-7 mins. Add in bone broth and stir, then cook another 7-10 mins. Use a wooden spoon to scrape the bottom of the pan so some of the browned bits come up and mix into the recipe. If cauliflower rice is still too watery, continue to cook on medium-low heat until the liquid evaporates off.

Top entire pan with sliced green onions and serve.
