Unless you've been living under a rock, you've probably heard of the latest Dalgona Coffee (AKA TikTok whipped coffee) that has taken the internet by storm. Here's a keto take on a spicy dirty chai dalgona coffee that's sure to wake you up + get you going.

Dirty chai dalgona coffee is definitely on my rotation now. I definitely have my "usual" coffee order and morning routine, but sometimes I just need to mix it up. I really think this would taste great in the fall, since it's got that little spice of cinnamon and white pepper that'll have you feeling all the cozy vibes. But for summer, the ice will keep you cool and refreshed.

Please note that your stevia brand will drastically change the sweetness of this recipe. My favorite stevia from Whole Foods does not have the same concentration as Sweet Leaf drops. I recommend that you start slow here with the sweetener. If you don't have stevia drops, you can totally sub it for something else, like Swerve Sweetener or Lakanto Drops or Whole Earth packets. The details here are totally up to you. This dirty chai dalgona coffee will be great no matter the variation.

Chai base
 16 oz Unsweetened almond milk
 2 Cinnamon sticks
 2 Chai tea bags
 ¼ tsp White pepper
Whipped topping
 ¼ cup Heavy cream
 2 tbsp Instant coffee
 25 drops liquid stevia (to taste)
 1 tsp cinnamon

Heat a small saucepan on medium-high heat. To make the chai base, pour in almond milk and add both tea bags and cinnamon sticks to the pan. Simmer 10 mins, but do not boil. If a lot of the liquid evaporates off, add a little bit of water (1/4-1/2 cup).

Remove pan from burner to cool down. While that's cooling, add all whipped topping ingredients to a small bowl (I use a ramekin) and whip. You can use a whisk or a fork, but I prefer to use a small latte mixer to give it a quick whip.

After your mixture is whipped, add 1 cup of ice to your cup of choice. I chose a mason jar because *aesthetics*

Pour chai base over the ice and top with instant coffee topping. Use a straw to give it a little stir so the sweetener starts to distribute to the drink. I think all dalgona coffees taste better with a straw, so you'll need that for this drink anyway. Hope you enjoy!
